Blind Assessment

Evaluated as espresso. Deep, pungent, complex. Dark chocolate, black cherry, musky lily, hints of oak and thyme in aroma and small cup. Plump, satiny mouthfeel. Lily and oak in particular carry into a crisply sweet finish. Maintains pungent authority in three parts milk: fudgy chocolate, cherry, oak.

Produced on the admired farm Fazenda Santa Ines and processed by the pulped natural or “honey” method, in which the skin is removed from the coffee fruit immediately after picking, but the seeds or beans are dried with all or part of the sweet pulp, or fruit flesh, still adhering to them.
